I wouldn't call this an error.  The package builds, right?

This is just the way RPM's automatic stripping of binaries works, see
/usr/lib/rpm/brp-strip.

BTW, Apache is one of those few things I wouldn't keep in a package.
I suggest that you build the latest and it will go under /usr/local
nicely.
